In this Smoke Lab, shows you how to smoke a full packer brisket on the Oklahoma Joe’s Longhorn Offset, then hold it overnight in the oven for tender, juicy slices the next day.

Ingredients
Full packer brisket
Your favorite BBQ rub

The Cook

Trim and season the brisket.
Smoke fat cap up with the point facing the firebox at 275°F for 8 to 10 hours, or until the center reaches 175°F.
Wrap in butcher paper and foil, transfer to a pan, and hold in a 175°F oven for 18 hours.
Rest on the counter for 1 hour before slicing and serving.

These Pineapple Pork Belly Skewers from .backyardbbq combine tender pork belly, caramelized pineapple, and sweet and sour sauce for the perfect bite.

Smoker: Oklahoma Joe’s Bronco

Ingredients:
• 2–3 lb pork belly, skin removed and cut into 1-inch cubes
• 1 whole pineapple, cut into 1-inch pieces
• 6 tbsp unsalted butter
• BBQ rub
• Brown sugar, to taste
• Kinder’s Sweet & Sour Wing Sauce

The Cook:

Preheat the Bronco to 250°F.
Season the pork belly with BBQ rub and smoke until it reaches about 160°F internally, approximately 1 hour.
Transfer the pork belly to a foil pan. Add butter, brown sugar, and sweet and sour sauce. Cover and return it to the smoker.
Cook for another hour, or until the pork belly is probe tender.
Alternate the pork belly and pineapple pieces on skewers.
Set up the Bronco for direct, high-heat grilling.
Grill the skewers until the pork belly and pineapple develop a caramelized char.
Finish with another drizzle of sauce and serve.

INGREDIENTS
● 8 chicken thighs
● Jonathan BBQ’s Cookout Dust
● Worcestershire sauce
THE COOK
● Splash your chicken with worcestershire sauce and season it with the Cookout
Dust
● Let it rest for 30 – 60 minutes
● Prepare smoker for low heat 225*
● Smoke the chicken for 1 hour and flip halfway through.
● Let chicken rest for 15 minutes
● Enjoy

Grilled NY Strip Steak Caprese by Paulie Sauce

Fresh, simple, and packed with flavor. Juicy grilled NY Strip steaks meet a bright Caprese topping of cherry tomatoes, fresh mozzarella, basil, and a drizzle of balsamic glaze. This is the kind of meal that makes summer grilling worth it.

🔥 Grill: Oklahoma Joe’s Judge
🍽 Serves: 2–3
⏱ Prep Time: 15 minutes
🔥 Cook Time: 15 minutes

Ingredients
• 2 NY Strip steaks
• 1 tbsp olive oil
• 1 tsp kosher salt
• 1 tsp coarse black pepper
• 1 tsp garlic powder
Caprese Topping
• 1 pint cherry tomatoes, halved
• 8 oz fresh mozzarella balls, halved
• ¼ cup fresh basil, torn
• 2 tbsp extra virgin olive oil
• 2 tbsp balsamic glaze
• ½ tsp kosher salt
• ¼ tsp black pepper

Directions
1. Coat the steaks with olive oil and season with salt, pepper, and garlic powder.
2. In a bowl, combine the tomatoes, mozzarella, basil, olive oil, salt, and pepper. Toss gently and set aside.
3. Preheat your grill to 450–500°F and lightly oil the grates.
4. Grill the steaks for 4–5 minutes per side for medium-rare, or cook to your preferred doneness.
5. Rest the steaks for 10 minutes.
6. Slice against the grain, top with the Caprese mixture, and finish with a drizzle of balsamic glaze.

Crab Stuffed Mushrooms 🦀🍄 by Byron Apple

Looking for the perfect BBQ appetizer? These Crab Stuffed Mushrooms are rich, buttery, packed with lump crab, and finished with a golden top after cooking on the Oklahoma Joe's Bronco.

Smoker: Oklahoma Joe's Bronco
Temperature: 350°F

Ingredients
• 1 lb lump crabmeat
• 1 lb baby bella mushroom caps
• ½ cup freshly grated Parmesan cheese
• 6 green onions, thinly sliced
• ½ cup mayonnaise
• 1 tsp Italian seasoning
• Salt and pepper, to taste
• Chopped fresh parsley
• Melted lemon herb butter

Directions

Preheat your Bronco to 350°F.
In a bowl, combine the crabmeat, Parmesan, green onions, mayonnaise, Italian seasoning, salt, and pepper.
Fill each mushroom cap generously with the crab mixture.
Smoke for about 20 minutes, or until the tops are lightly browned.
Brush with melted lemon herb butter, garnish with fresh parsley, and serve immediately.
